這款精緻的法國千層蛋糕由本世紀六十年代一位名廚加斯頓里昂雷(Gaston Lenore) 首創, 那時候通常在歌劇上演的間場時間供觀眾享用。

What is Opera cake?
There are many stories about the origins of this cake, known as both Clichy cake and Opéra cake. Many believe that Louis Clichy was its creator because he premiered the gâteau, with his name written across the top, at the 1903 Exposition Culinaire in Paris. It became the signature cake of Clichy's shop on the Boulevard Beaumarchais. However, another pastry shop, Dalloyau, sold a very similar dessert, known as L'Opéra (in honor of the Paris Opera), and some claim that theirs was the original.

While another story i found from the internet says: The opera cake was created in the 1960s by the well-known French pastry chef Gaston Lenôtre. The marriage between opera and desserts is a daily reality in a number of great opera houses. At New York's Metropolitan Opera for instance, the well-to-do dine with refinement at the in-house restaurant before the show. At the first bell, the music lovers are careful to reserve their dessert for the first intermission!

To sum it up: this is a wonderfully rich combination of delicate almond biscuit or joconde, chocolate ganache, coffee buttercream, and chocolate glaze. It's like a very refined layer cake.

very interesting research too! i never knew anything about opera cake. the black heart looks very rich too...you had 2 rich chocolate cakes by yourself???
